Nisin is a natural preservative and has been used in the food industry for more than 50 years. Delvo Nis by DSM Food Specialties is a product formulation based on active Nisin. In liquid egg Delvo Nis will prevent the growth of food poisoning spore forming bacteria, like Listeria monocytogenes and Bacillus cereus, of which typically 1% survives the pasteurization treatment.
Refrigerated temperatures provide ideal growth conditions for these bacteria, which pose a threat later in the food chain.
