Before Easter, supermarkets offer coloured hard-boiled eggs often unchilled. The market offers a guaranteed shelf life of up to 28 days but with the advice to “keep eggs refrigerated”. In contrast to fresh eggs, no EU – or national directives exist for hard-boiled eggs. Nevertheless, eggs should always show signs of freshness; but there is little known about how long and in which conditions hard-boiled eggs can be stored.
