Ukraine establishes new standards for poultry meat

As of 2016, Ukraine will establish new standards for the maximum amount of moisture content in poultry carcasses, this will depend on the method of cooling used reported Ukraine media Unian.

The corresponding norm is fixed in the order of the Ministry of Health number 694 “On approval of the hygiene requirements for meat and poultry and indicators of its quality”.



According to the document, for poultry carcasses that are chilled with the air method the content of moisture should not exceed 1.5%, for poultry that is chilled with spray cooling should not exceed 3.3 %, and for a chilling by immersion in water – no more than 5.1%.



Previously the Ministry of Agrarian Policy and Food already offered to set the maximum amount of moisture in the poultry meat at the level of 4% from the total weight of the carcass, but this proposal was not supported by Ukrainian producers.



The head of the Poultry Union of Ukraine Alexandr Bakumenko said that the new standards will meet the requirements of the EU.  It will be entered only from 2016, so the producers have time to upgrade their producing process in order to be able to produce poultry within these standards.
